I have a hard time believing this recipe:
French Flourless Chocolate Cake (Yield: 8 - 10 servings)
Ingredients
1 cup semisweet chocolate coins or chips (50/60% cocoa)
3/4 cup plus 1/8 cup salted butter
1 cup sugar
4 eggs separated
Optional:
Cocoa powder or Confectioner’s sugar for dusting
Raspberry sauce, lemon or raspberry sorbet
- Preheat oven to 350
- Line a 9 inch cake tin with greaseproof or other non-stick paper and grease the tin.
- Melt chocolate with butter in a bowl or pan over hot water (double boiler)
- Beat the egg yolks with half of the sugar
- Fold in the melted butter and chocolate mixture
- Beat egg whites until frothy while adding remaining sugar gradually, beating until stiff peaks form
- Fold in the beaten egg whites into chocolate mixture
- Bake at 350 until center tests clean, apprx 30-40 minutes
- Cool cake and use knife to separate the cake from the non-stick paper as it may be quite sticky: cake forms a crusty top that falls when cools
- Dust cake with cocoa or Confectioner’s sugar
- Serve at room temperature with a dollop of whipped cream and dust with cocoa powder
- To balance out the richness a nice raspberry sauce works well or a lemon or raspberry sorbet
I’m in the market for a bike. Requirements: it must be used, it must be light enough to carry up four flights of stairs everyday, and it must have gears so I can actually use it in Cinci.
